Ricotta Pesto Mushrooms - Recipe



This is easily one of most impressive looking meals I have made with under 3 mins worth of preparation!

What you need and price I paid
This recipe is for two people assuming they will eat two mushrooms each so halve/double/triple etc the recipe for the quantities needed.  The prices are just what I paid in the shop I bought the ingredients in, so will vary slightly depending on where you go and what quality ingredients you use.
1 tub of ricotta cheese £1
1 small jar of basil pesto 190g £1.90 (you can use other pesto types!)
4 large flat mushrooms £1.75 (you can use 12ish small chestnut mushrooms and make this as a starter/canape dish for a few people)
2 cloves of garlic (40p for a whole garlic)
Optional - Parmesan cheese £2 for a block/ grated packet

How to Cook/Prepare
(preheat the oven to 200 degrees c)
1. Open the tub of ricotta cheese
2. Mix roughly four teaspoons worth of pesto with the cheese
3. Add the garlic 
Cut the top and bottom off the garlic.  Use two of the cloves (sections) and peel them so that you are left with just the white inside and no peel. Crush the 2 cloves of garlic with the side of a knife or chop into very small pieces and add to the mixture.  Stir well!
4. Wash the 4 mushrooms thoroughly. I
f necessary peel the outside skin off and chop off the excess stalk so that they are flat.
5. Place the mushrooms onto a flat, ovenproof dish and then scoop the mixture onto the mushrooms.
6. Optional - you can add parmesan cheese to the top of the mushrooms to create a crispy outside but I didn't have any at the time so I have not done this.
7. Place in the oven for about 15-20 minutes. 
 Check on them and decide when you think they are about done.
8. When cooking mushrooms like this there is often alot of water left in the dish that has come from them.  Just scoop the mushrooms and their topping out with a slotted spoon or spatula and drain the water before serving.
Thats it!

Unfortunately, the only photos I have are of the dish are before being cooked because the rest of my family gobbled them all up as soon as they came out the oven!

Nutrition
One tub of ricotta contains about 339 calories, a jar of pesto around 390 calories, two garlic cloves about 8 calories and 4 flat mushrooms roughly 44 calories.
I would estimate in each mushroom there are about 195 calories so in two 390 calories.  You might want to serve these along side with some new potatoes for a full dinner!

Overall Reaction 
Such a quick recipe that involves hardly any work and results in a good looking and very tasty dish!
